In this blog post, you will find an eBook that contains an index of all the men that belonged to the order of Santiago from 1501 to 1901.
This index contains the names of persons from every corner of the Spanish empire including La Nueva Spaña now days Mexico.
Of the top of my head three names stand out that were born or lived in New Spain and were members of the order of Santiago.
They are:
Jose de Escandon y la Helguera inducted into the order in 1749. Jose de Escandon is the colonizer of el Nuevo Santander now a days Tamaulipas, Mexico.
Juan de Oñate y Salazar inducted into the order in 1625. Juan de Oñate is the colonizer of El Nuevo Mexico, now a days New Mexico.
Vicente Zaldivar y Diaz de Mendoza inducted into the order in 1625. Vicente was Maestre de Campo and one of the captains with Juan de Oñate into his colonization efforts of New Mexico.

The application they had to submit in order to qualify to be inducted into the order of Santiago is invaluable. In it you will find a genealogy chart going back a few generations since they had to prove that they were old Christians.
